Organic apricot kernels can be ground or chopped and sprinkled on hot vegetables, salads, baked potatoes, soups or cereals - or they can be nibbled as they are as a snack.
The apricot kernel is the soft part inside the seed of the apricot and it is one of the richest sources of vitamin B17 available. Many doctors, nutritionists and medical researchers believe that vitamin B17 is vitally important as the immune system’s ‘second line of defence’. Until about 150 years ago the average diet contained sufficient vitamin B17. Since industrialisation and the gradual switch to sweeter more refined foods, the average western diet is lacking in this powerful nutrient.
The seeds are also rich in protein and polyunsaturated fats. They also contain as much as 2 percent nitriloside. Nitrilosides are broken down by the body’s natural enzymes to produce benzoic acid (anti-rheumatic and antiseptic properties), salicylic acid (aspirin) and thiocyanates (often used in the treatment of hypertension).
Apricot kernels are also an alkaline forming food (pH 7.5-8.0) so can be a useful part of an alkalising diet. The recommended dosage is 1 kernel per day for each 20 pounds (or 10kg) of body weight. It is recommended that adequate levels of zinc are maintained for the maximum absorption of B17.
